Priceless Memories of a Priceless Cake

We’re excited to offer our Caribbean Fruit Cake! In the Caribbean, this is commonly known as black cake. Hear from co-founder Karen as she recalls her fond memories of making black cake in Trinidad.

When I think about black cake, I often think about holidays like Easter and Christmas, and I also think about weddings. Growing up in Trinidad, it was traditional to serve black cake around these occasions. We treasure the cake as special as black cake is costly to produce and requires intensive preparation. Making black cake requires soaking fruits, spices, and rum in just the right combination to create a uniquely intense and flavorful cake.

My mom used to make very succulent and flavorful black cakes, but they were not always perfectly done. It wasn’t until I was in my later teenage years when I enrolled in a food preparation course, that I learned to prepare this special cake the right way. I was able to take what I learned from the course and bring it back home to my mom, where I showed her how to adjust her technique to make the cake last longer. As time went on, I further mastered the art of making this priceless cake which was beloved by many family and friends.

My mom in particular became a specialist in making black cake, and everyone used to come to her house around the holidays to get a slice. Black cake truly is a cake that brings people together! It is in that same spirit that I bring my black cake to you. Enjoy!
