From the Kitchen: Curry Chicken Wings

You can say we’re Trini to de bone, because we sure do love making curry! It’s one of our favorite foods, and if we’re not currying chicken, we’ll often do some curry shrimp, or curry potatoes and channa (chick peas). See below for how we recently did some chicken wings. Yes, it was as tasty as it looked!

Recipe (Serves 3 - 4 people )
Ingredients
2 pounds of chicken wings
2.5 tablespoons of Madras Curry
2 tablespoons of Island Herb Blend
2 tablespoons of olive or avocado oil
Water as needed
Onions and bell peppers to taste
Herbs and spices to taste
Salt and pepper to taste
Steps
Marinate chicken wings using 2 tablespoons of our island herb blend. Set aside for 30 minutes in the refrigerator (for a more intense flavor, you can marinate the wings for a few hours. Wings can also be marinated overnight.).
Add 2.5 tablespoons of madras curry to 3 tablespoons of water. Stir until you get a well mixed paste
Add 2 tablespoons of oil to a pot on medium heat.
Once oil is hot, add herbs and peppers to the pot, and stir for 1 min
Add curry paste to the pot, and stir for 2 minutes
Add chicken to the pot and stir until well covered in the paste
Cover chicken and let it simmer for 3 minutes
Add water as needed to create a sauce (about 1 cup) and stir chicken
Cover chicken and let it simmer for 20 mins, making sure to occasionally stir
Remove chicken from heat and enjoy!
