Recipe: Dreams in Drive’s Sweet Lemon Pepper Shrimp with Spicy Mango Chutney

We’re a fan of this recipe that’s a bit sweet and a bit spicy. The Spicy Mango Chutney makes a great dipping sauce, and the heat complements the sweetness of the shrimp. As you’ll also see, the chutney is great with the fried plantains as well!

Ingredients

  • Peeled and deveined shrimp

  • Lemon pepper seasoning

  • Adobo seasoning

  • Salt

  • Onion powder

  • Garlic powder

  • Smoked paprika

  • Honey

  • Spicy Mango Chutney

  • Ripe sweet plantain, peeled and sliced

  • Vegetable oil

Steps

  1. In a large bowl, mix together the shrimp and dry ingredients.

  2. Add a light amount of oil to a frying pan and heat until hot.

  3. Carefully place shrimp in the pan and fry on both sides until golden brown. Shrimp cooks really quickly, so this shouldn’t take too long.

  4. Place shrimp on skewer sticks and glaze with honey. You can then set aside.

  5. In a separate pan, heat oil until hot.

  6. Place plantains in oil an fry on both sides.

  7. Remove plantains from pan once they turn golden brown.

  8. You can now put it all together. Add the Spicy Mango Chutney to a ramekin. And serve with the shrimp and plantains. To balance out the meal you can add in salad as well.
