From the Kitchen: Savory Apple Corn Muffins

This time of the year is one of our favorites for food. For Thanksgiving and Christmas, our family typically prepares a combination of Trinidadian and American foods. While Thanksgiving will look a little different this year, we’re still preparing some of our favorite foods. Something simple that we like to make are corn muffins. We’ve put a spin on these traditional treats by incorporating our favorite fall fruit: apples. These muffins have tasty autumn notes as the flavor of the apples really do come through. The chutney also adds a nice hint of spice, providing for warming relief on cold and rainy days. To jazz up these muffins, also included an apple topping. The addition of fresh fruit on top helps to liven things up. Be sure to give it a try for yourself!

Recipe (Makes 12 - 14 muffins)
Ingredients
Muffins:
1 teaspoon of clove powder
1 teaspoon of cinnamon essence
2 teaspoons of cinnamon spice
2 teaspoons of baking powder
2 tablespoons of Spicy Apple Chutney
2 ounces of sugar
1 egg
1 small can of whole corn
8 ounces of butter
8 ounces of evaporated milk
1 cup corn flour
2 cups of all purpose flour
Fresh Apple Topping:
1 stick of cinnamon
1 teaspoon of cinnamon essence
1 teaspoon of cinnamon powder
2 grains of allspice (whole)
2 tablespoons of Spicy Apple Chutney
1/2 cup of water
2 ounces of sugar
2 apples (chopped in medium pieces)
Steps
Preheat oven to 350 degrees Fahrenheit.
For the muffin, add all the dry ingredients together in a bowl and mix together
In a blender, combine corn and evaporated milk. Blend together finely
Melt butter in a saucepan. Once cooled, add in the blended corn mixture, cinnamon essence, Spicy Apple Chutney, and egg. Beat well
Add the liquid mixture to the dry ingredients and mix well
Place mixture into muffin tins
Bake for 25 minutes until golden brown
For the topping, add water to a saucepan. Let the water come to a boil.
Add in sugar, cinnamon stick, and allspice. Let boil for 15 minutes.
Add apples, cinnamon spice, cinnamon essence, and Spicy Apple Chutney to the mixture.
Let it cook for another 20 minutes before removing from the heat.
When you are ready, drizzle the apple topping on top of the muffin and enjoy!
