From the Kitchen: Curry Channa and Potatoes

You’ve seen us make curry chicken wings. Now we’re at it again with our curry channa and potatoes. In Trini speak, channa is our way of saying chickpeas. While this delectable dish serves as a great accompaniment to meat, it is very hearty and also tastes great with rice, vegetables, or bread.

Recipe (Serves 3 - 4 people )
Ingredients
2 potatoes, diced
1 can of channa (chickpeas)
2.5 tablespoons of Madras Curry
0.5 teaspoons of cumin
2 tablespoons of olive or avocado oil
Water as needed
Onions and bell peppers to taste
Herbs and spices to taste
Salt and pepper to taste
Steps
Add madras curry to 3 tablespoons of water. Stir until you get a well mixed paste
Add oil to a pot on medium heat.
Once oil is hot, add herbs and peppers to the pot, and stir for 1 minute
Add curry paste to the pot, and stir for 2 minutes
Add potatoes and channa to the pot and stir until well covered in the paste
Add water as needed to create a sauce (about 1 cup) and stir
Add in cumin and salt to taste
Continue stirring until the potatoes and channa are thoroughly cooked
Remove from heat and enjoy!
