From the Kitchen: Caribbean Boiled Corn

There are a few things us Trinis like the most: food, fetes, and Carnival. Since we couldn’t grace the streets of Port of Spain for Carnival, we decided to recreate one of our street food favorites. Boiled corn is simply a Caribbean take on corn on the cob. It is chock full of herbs and spices - so it makes for a delicious treat!

Recipe (Serves 4 people )

Ingredients

  • Italian parsley, chopped

  • Spring onions, chopped

  • 1 sprig of thyme

  • 1 tablespoon Island Herb Blend

  • 2 tablespoons of olive or avocado oil

  • 3 cloves of garlic, diced

  • 3 cups of water

  • 4 ears of corn, shelled

  • Mango pepper sauce to taste

  • Salt and pepper to taste

Steps

  1. Add oil to a pot on medium heat.

  2. Once oil is hot, add garlic and herbs to the pot, and stir for 1 minute

  3. Add corn to the pot

  4. Add water to the pot

  5. Add in salt and pepper to taste

  6. Add in island herb blend to the corn and top with a sprig of thyme

  7. Cover pot and let corn boil for approximately 35 - 40 minutes, or until the water boils down

  8. Remove corn from heat

  9. Top with mango pepper sauce, and enjoy!

Take it up a notch

We love eating boiled corn by itself, but it can also be eaten as a side dish. To make your corn spicier, add more pepper sauce - but be careful - only add as much as you can handle!
