From the Kitchen: Grilled Kabobs

Before summer officially comes to a close, we decided to squeeze in one more recipe on the grill. We made grilled kabobs because it’s basically a meal on a stick. Add your veggies, fruit, and meat in any combination, and viola, you’ve got a medley of flavors to enjoy! We like to keep it spicy over here, so we coated our kababos with our Spicy Mango Chutney to give it a kick! The great thing about kabobs is that you can adjust them according the your taste. So we’ll forgo measurements below, and let you determine how much of the below ingredients you’ll like to include on your kabob stick!

Recipe
Ingredients
Chicken breasts, cubed
Mini sweet peppers
Mushrooms
Pineapple, cubed
Summer squash, cut in thick slices
Zucchini, cut in thick slices
Salt and black pepper (to taste)
Steps
Marinate meat, fruits, and vegetables for at least one hour in the Island Herb Blend. We recommend adding at least 2 teaspoons per pound of fruit, vegetables, and meat. Be sure to add salt and black pepper to taste.
After all the ingredients have marinated, arrange them on skewer sticks. If you are using bamboo skewers, soak them in water for about 30 minutes to reduce charring.
Once the grill is hot, place the skewers on the grill and cover for 10 minutes.
After 10 minutes, uncover the kabobs.
Brush the Spicy Mango Chutney onto the chicken, making sure to coat well.
Cover the kabobs for 3 minutes.
Remove the kabobs from the grill, and enjoy!
