From the Kitchen: Spicy Stuffed Peppers

We recently had to chance to visit the 804 Cattle Company, just a stone throw’s away from our backyard. It was an amazing experience to see regenerative agriculture in action. The owners raise the cattle with such care and compassion, it was breathtaking to witness. Now, this trip didn’t happen by mere coincidence. We’ve tried beef from 804 Cattle Company before, and loved the quality! So, when we met the owners, the idea of a partnership naturally formed. We put our creative genius together, and will be bringing you a series of recipes featuring their tasty beef.

Our first recipe as part of this collaboration is Spicy Stuffed Peppers. This will be a winner for the holiday season and also at large gatherings. These peppers will make for a delicious meal all by itself or can be served as a main entrée among sides. You will be coming back for seconds. We know we did! Recipe (Makes 4 Stuffed Peppers)

Ingredients

  • ½ teaspoon of black pepper

  • ½ teaspoon of clove powder

  • ½ onion, diced

  • 1 tablespoon of oil

  • 2 tablespoons of Pumpkin Spice Pepper Sauce

  • 2 cloves of garlic, diced

  • 2 sprigs of green onion, chopped

  • 3 sprigs of parsley, chopped

  • 3 tablespoons of Spicy Herb Blend

  • 2 tablespoons grated parmesan cheese

  • 1 carrot, cubed

  • 1 cup steamed rice

  • 1 pound ground beef

  • 1 cup of tomato sauce

  • 4 medium bell peppers

  • Salt to taste

Steps

  1. In a medium bowl, season ground beef with salt, black pepper, clove powder, pepper sauce, and the Spicy Herb Blend. Set aside after mixing.

  2. Add oil to a large pan on medium heat.

  3. Once oil is heated, add in the chopped herbs and vegetables and sauté until golden brown.

  4. Add seasoned beef to pan, and continue to sauté until the beef turns golden brown.

  5. Turn stove on low heat.

  6. Add 3 tablespoons of tomato sauce to the pan and stir for 2 minutes.

  7. Add 1 cup of steamed rice to the pan and stir until well mixed.

  8. Remove pan from heat and set aside.

  9. Add about 4 cups of water to a large pot and bring to a boil.

  10. Prepare the bell peppers on a cutting board. Start by slicing off the tops, and then remove the center membrane/seeds.

  11. Once the water has boiled, add bell peppers to the pot and cover with the lid.

  12. Let peppers boil for 10 minutes.

  13. After the peppers have boiled, remove peppers from the water. This can be done with tongs. Caution, peppers will be hot.

  14. Preheat oven to 350 degrees Fahrenheit.

  15. Coat the bottom of a baking pan with cooking oil/spray.

  16. Place peppers in the baking dish.

  17. Fill each pepper with the rice and beef mixture.

  18. Top pepper with tomato sauce (depending on the size of the peppers, this can be about 2 - 3 tablespoons each).

  19. Sprinkle a desired amount of parmesan cheese on top of each pepper.

  20. After oven has preheated, place the baking dish on the center rack and bake for 18 minutes or until well done.

  21. Remove from oven, cool out, and enjoy!
