From the Kitchen: Oven Baked Salmon with Roasted Garlic Sauce

We love a juicy and tender salmon. It’s one of our favorite entrées to pair with delicious sides for a scrumptious meal. We topped our with a variety of vegetables and roasted garlic sauce to elevate it to the next level!

Recipe (Serves 4 people )
Ingredients
20 oz skinless salmon portions (approximately 4 pieces)
1 bell pepper (cut into strips)
1 large tomato (sliced)
1 small onion (cut into rings)
2 teaspoons of Island Herb Blend
1 teaspoon of ginger (minced)
Salt and black pepper to taste (we recommend 1/2 teaspoon of each)
4 teaspoons of Trini Roasted Garlic Sauce
1 tablespoon of vegetable oil
Vegetable oil spray
Steps
In a medium bowl, season salmon with Island Herb Blend, ginger, black pepper, and salt. Marinate for 30 minutes in the refrigerator (for a more intense flavor, you can marinate for longer).
Preheat over to 400 °F.
Add vegetable oil to a small frying pan on low heat.
Add bell peppers and onions to pan.
Sauté vegetables on medium heat for 2 - 3 minutes.
Remove from heat and set aside.
In a separate baking dish, spray with vegetable oil spray.
Place salmon portions in the baking dish.
Cover the portions with the tomato slices.
Place in the oven and bake for 20 minutes until done.
Remove from the oven.
Top the salmon with the sautéed vegetables.
Let the salmon cool before serving (approximately 10 minutes).
When serving, top each portion with 1 teaspoon of garlic sauce.
