From the Kitchen: Hot Curry Chicken Tenders

We’re not shy about our love of curry over here! We love it so much, we even briefly had it in our store earlier on this year. We typically like to do a nice curry and serve with some roti, but this time around, we decided to switch things up and using it in a different way. We love curry for its vibrant color and rich aroma. So we decided to combine with one of our other favorite spices (pepper sauce) to create some deliciously golden yellow chicken tenders. These tenders make for a delicious snack and are pretty simple to make. Give them a try, and experience the medley of flavors for yourself!

Recipe (Serves 3 - 4 people )
Ingredients
1 ½ pounds of chicken tenders
2 tablespoons of Island Herb Blend
3 tablespoons of Pumpkin Spice Pepper Sauce (for extra spicy tenders, you many want to use more. If you don’t have a high spice tolerance, we recommend using less)
3 tablespoons of Madras Curry
1 cup of flour
Salt and black pepper to taste
Vegetable oil
Steps
Marinate chicken tenders in Island Herb Blend, Pumpkin Spice Pepper Sauce, black pepper, and salt. Set aside for 30 minutes in the refrigerator (for a more intense flavor, you can marinate the tenders for a few hours. Tenders can also be marinated overnight.).
In a medium bowl, combine the flour and curry until well mixed.
Dip the chicken tenders in the flour mixture and coat evenly on each side. Shake off any excess flour.
Pour a generous amount of oil in a frying pan or deep fryer and heat until hot. Use enough to cover the tenders.
Carefully place the tenders into hot oil and fry evenly on both sides for about 10 - 12 minutes or until golden yellow/brown.
Remove tenders from oil when done and rest on a plate. We recommend removing from the pan with a sieve/skimmer spoon to drain excess oil.
Let the tenders cool for a bit and then enjoy!
